Distillation
Separate maceration of botanical families in grape alcohol, individual distillation of aromatic distillates and blending; infusion of the vine blossom in eau-de-vie and final double distillation of the assembled wash in the 'Lily-Fleur' still (the blossom also passes through a Florentine 'Flo' still).
Ageing
Generally gins are not aged; however there are special expressions (e.g. Nouaison Réserve) that undergo finishing in Cognac casks.
