The sip is soft yet structured: the palate is enveloping, with a delicate weave of sweet spices and a lingering freshness that maintains balance, leading to an elegant, dry finish. Ageing
Aging in French oak barrels (Gascogne and Allier) of 225 and 400 L in a humid chai on a packed-earth floor; natural evaporation (angel's share) estimated at about 3–5% per year; gradual reduction with osmosis-treated water before bottling.
