La Licorne Tenareze Brut de Fût 2000 presents itself as a bottle that speaks of time: the now-mature vintage translates into a complex, restrained aromatic profile. The perlage, fine but less lively than that of a young example, supports sensations of bread crust, toasted almond and dried fruit, while light hints of quince and ripe citrus add a fresh note without overpowering. On the palate it lands gracefully, balancing a pleasant roundness with a salinity that keeps the drink lively; the finish leaves impressions of toast and a mineral hint, a sign of a well-defined personality and a sensory journey that is more reflective than immediate. Distillation

Continuous distillation following the armagnacaise tradition in a copper still (plate column, vintage still).

Ageing

Aging in French oak barrels (Gascogne and Allier) of 225 and 400 L in a humid chai on a packed-earth floor; natural evaporation (angel's share) estimated at about 3–5% per year; gradual reduction with osmosis-treated water before bottling.
