The Mezcal Coyote by Los Danzantes is born in the Oaxaca region, the beating heart of Mexican mezcal tradition, where agaves grow lush on volcanic soils rich in minerals. This authentic expression is mainly obtained from espadín agave, hand-harvested and processed according to artisanal methods that involve cooking in traditional stone ovens, followed by a slow natural fermentation. The result is a distillate with intense but well-balanced smoky notes, with an olfactory profile ranging from herbaceous and earthy tones to hints of citrus and sweet spices.

On the palate, the Mezcal Coyote is soft and enveloping, with a complex structure that enhances the character of the territory of origin and the wisdom of the distillation. The persistent finish recalls the smokiness without overpowering the freshness of the fruity aromas, making it ideal both as an aperitif and to accompany traditional Mexican dishes such as mole or grilled meats. Los Danzantes is a Mexican mezcal producer based in Oaxaca. Founded around the late 1990s, it makes artisanal mezcal using traditional methods (underground ovens, tahona, natural fermentation, double distillation) and a range that includes joven, reposado, añejo and varietal expressions from different agave species.

Distillation

Double distillation in copper stills; first distillation to obtain the 'ordinario' and second to separate heads, heart and tails; use of the traditional 'venenciar' technique to evaluate cuts.

Ageing

For the aged labels: finished in barriques (225 L) with maturation times declared by the house (e.g. Reposado minimum 9 months, Añejo around 16 months), with batch-specific proportions between American oak and French oak.
