Nibbio Della Sala from Castello della Sala by Marchesi Antinori is a white wine classified Umbria IGT. It shows a bright straw-yellow colour. On the nose it offers a discreet, measured profile, with hints of white flowers, fresh citrus and sensations of white-fleshed fruit; in the background are light herbal notes and a mineral trace. The overall impression is clean and readily identifiable, suited to those seeking a restrained expression of the territory.

On the palate it reveals good freshness and a lean structure; acidity supports the sip, making it smooth, with a pleasant and persistent finish. It is not a wine of excess, but it pairs well with seafood starters, shellfish, light fish dishes, grilled vegetables and fresh cheeses. Serve chilled, around 8–12 °C, in tulip-shaped glasses to enhance the aromas. Best enjoyed relatively young, it is a versatile choice for informal dinners and seasonal menus.

Winery history
The estate’s winemaking origins are linked to the noble Della Gherardesca family (vineyards since the late 17th century). The property entered the Antinori holdings in the 1930s; the estate’s modern winemaking development took place from the late 1980s–1990s. First documented vintage of Vermentino at the estate: 1996.
Production philosophy

Terroir and vineyards
Located in the Bolgheri DOC (Upper Maremma) on a plain encircled by gentle hills known as the “Bolgheri Amphitheatre.” Climate is moderated by sea breezes; alluvial soils range from sandy-clay to silty-clay with fine gravel (Bolgheri agglomerate), influencing the character of varieties grown (Cabernet, Merlot, Vermentino, etc.).
