Pairing Desserts, blue cheeses
A passito with warm, enveloping character, it offers a measured sweetness that does not overpower the freshness. In the glass it releases notes of dried and candied fruit — apricot, dried figs — and accents of honey and orange zest; the texture is soft but supported by a lively acidic vein that keeps the sip bright. The body shows density without weighing it down, with a persistence that leaves bittersweet memories and a pleasant savory finish, a sign of balance rather than sugary excess. Light notes of toasted almond are also perceived at the close.

It is well suited to close a meal with fruit-based desserts, creamy spoon desserts, or dry pastries; paired with blue cheeses or small portions of foie gras it highlights its complexity. Serve chilled, in not-too-large dessert wine glasses, to capture its compact aromas without losing freshness. A bottle to share in moments of gastronomic meditation, when you seek a sip that is rich but balanced.
