Distillation

Discontinuous distillation in stills (pot still/lambicar) with controlled fraction separation to preserve aromas; fermentation of pomace in stainless steel tanks before distillation.

Ageing

Aging in wooden containers (barrique and large casks) and in steel depending on the lines; there are long-aged references (e.g., the Historiae line up to 12 years) and barrique lines (minimum 36 months for some labels).
