The Pinot Nero Della Sala Umbria IGT from Castello della Sala, produced by Marchesi Antinori, shows a restrained, elegant profile that favors freshness and finesse. In the glass it has a bright ruby hue; on the nose there are red fruit notes such as cherry and raspberry, delicate floral hints and light spicy and earthy touches that add complexity without upsetting the balance. The structure is modest but defined, with fine tannins and lively acidity that support the palate. It is enjoyable when young and best served around 14–16 °C to highlight the finer aromas. Suitable pairings include moderately flavored dishes: roasted poultry, mushroom-based preparations, lighter red meats and medium-aged cheeses. To fully appreciate its harmony, open the bottle shortly before serving or let the wine breathe for a few minutes.

Winery history
The estate’s winemaking origins are linked to the noble Della Gherardesca family (vineyards since the late 17th century). The property entered the Antinori holdings in the 1930s; the estate’s modern winemaking development took place from the late 1980s–1990s. First documented vintage of Vermentino at the estate: 1996.
Production philosophy
To express the Bolgheri terroir through parcel selection, experimentation in the vineyard and cellar, and practices focused on quality and respect for the territory.
Terroir and vineyards
Located in the Bolgheri DOC (Upper Maremma) on a plain encircled by gentle hills known as the “Bolgheri Amphitheatre.” Climate is moderated by sea breezes; alluvial soils range from sandy-clay to silty-clay with fine gravel (Bolgheri agglomerate), influencing the character of varieties grown (Cabernet, Merlot, Vermentino, etc.).
