The aging in oak barrels gives the aromatic profile a refined complexity, with notes ranging from the fresh herbal tones of the cane to sweet and spicy hints of vanilla, toasted wood, and a delicate touch of dried fruit. Distillation
Rhum agricole: distillation of pure cane juice. The company reports extended fermentation and a slow fractional reduction (around 60 days for some cuvées) followed by a stabilization period in stainless steel tanks before bottling.
Ageing
Aged expressions are matured in selected oak casks; some cuvées are blends of aged rums (e.g. Grande Réserve XO: a blend of rums aged 8–10 years). There are also finishes in ex‑Port casks for the Port Cask Finish line.
