Distillation
Combination of column still method (for lighter/neutral components) and pot still components (for richer expressions). Controlled fermentations are used for light rums and natural/spontaneous fermentations for heavy rums; the resulting distillates are then blended according to the desired profile.
Ageing
Mostly matured in charred American oak barrels (ex-bourbon). For some selected bottles or independent bottlings there have been releases with 'tropical' aging (continuous maturation in Jamaica) and 'continental' (further maturation/finishing in a European climate), allowing comparison between maturation in different climates.
