On the palate the sip is warm, flavorful and easy-drinking, with a good structure and light tannins that support the progression. The typical salinity of the cane keeps the spirit lively, while the finish remains persistent with echoes of vanilla, sweet tobacco and a slight vegetal note. It’s suited to be enjoyed neat at the end of a meal or with a small addition of water to open its aromas; it pairs well with dark chocolate, caramel-based desserts or spicy dishes.

Distillation
Small-batch distillation: clairin distilled in a copper creole still (pot still); components of the 5 Year blend produced both by pot still and by column distillation.
Ageing
Variable aging depending on the product: the aged Rum Clairin spends 18–22 months in new American oak barrels; other blends (e.g. the 5 Year) are aged 5 years in ex-bourbon casks.
