The sip is warm and clean, flowing with a softness that nevertheless leaves room for a fragrant persistence; the impression is one of depth rather than excessive sweetness, with vegetal returns that invite slow sipping or use in bold cocktails. It pairs well with spiced preparations or dishes based on meat and aged cheeses, and provides pleasant contrasts with dark chocolate. Distillation
Small-batch distillation: clairin distilled in a copper creole still (pot still); components of the 5 Year blend produced both by pot still and by column distillation.
Ageing
Variable aging depending on the product: the aged Rum Clairin spends 18–22 months in new American oak barrels; other blends (e.g. the 5 Year) are aged 5 years in ex-bourbon casks.
