On the palate it confirms the olfactory promise with a round, well-balanced sip: the structure is full, with a softness that sustains contrasts of sweetness and light tannins. The finish is long and dry, leaving traces of sweet spices and a pleasant savory note. When served just at room temperature or with a small glass of water to open up its profiles, it lends itself to post-meal contemplation or pairings with dark chocolate and aged cheeses. Best enjoyed in a tulip glass or tumbler, it also makes an excellent base for signature cocktails that require a structured rum.
