On the palate the good integration between sweetness and savoriness is confirmed; notes of caramel, dark chocolate and a spicy base of cinnamon and white pepper lead to a long, clean finish. It is recommended to serve it at room temperature or slightly chilled to open the aromas. It is a rum to drink neat to appreciate its depth, ideal as a digestif or paired with chocolate and dried-fruit desserts, and it also works well with aged cheeses or in cocktails that wish to preserve the character of the XO.

Distillation
Various: Planteray bottles and blends rums distilled at different facilities; methods include both pot still (including repeated/double‑retort pot stills for certain releases) and column still, depending on the distillery of origin.
Ageing
Double maturation: initial aging in the place of origin (tropical climate, often in ex‑bourbon) followed by a period of finishing/aging in France in Ferrand casks (ex‑Cognac) or other selected casks (e.g. Pedro Ximénez, special finishes).
