Amontillado is a type of Sherry that undergoes a unique aging process: it starts as a Fino, a fortified wine under a protective layer of yeast called "flor," which protects it from oxidation and gives it those fresh and lively notes. Over time, as the flor begins to fade, the wine undergoes slight oxidation that enriches its flavor with complexity and depth. The result is a middle-aged wine that exhibits an extraordinary range of aromas and flavors.

Visually, the Sherry Romate Amontillado boasts a bright light amber color.
