La Storia de I Sabbioni è intimamente legata al Sangiovese: il grande interprete delle colline romagnole. Lo Spumante Dosaggio Zero può considerarsi l'alter ego, elegante ed effervescente, del Sangiovese Le Liti.

La vendemmia avviene solitamente durante la prima decade di Settembre, le uve vengono immediatamente pressate in maniera soffice e vinificate in bianco. L'affinamento è in acciaio sulle fecce fini per 8 mesi, e in seguito rifermentato in bottiglia, permanenza sui lieviti minimo 24 mesi.

Uno spumante metodo classico “blanc de noir", dosaggio zero, dal perlage fine e persistente. Colore giallo dorato, all'olfatto questo calice odora di lievito madre, memorie saline che con l’ossigeno diventano fortemente salmastre. 

Al palato presenta un gusto granitico, cremoso ed elegante parlando il linguaggio dei “blanc de noir”, tra tannini suadenti e verticali freschezze. Ottimo a tutto pasto in abbinamento a piatti delicati, ma è nella veste di aperitivo che regala il massimo delle sue potenzialità.
