On the palate the sip is round and balanced, with well-measured warmth and a structure that supports notes of sweet spice and a slight saline finish; the persistence is pleasant without being intrusive. Versatile in use, it works well neat or with ice, and adds complexity to classic cocktails; in the kitchen it pairs with spicy dishes, grilled fare and fish-based preparations, as well as with dark chocolate for a more indulgent pairing.

Distillation
Two-stage process (first distillation to obtain a liquid around 20% vol., then rectification/second distillation up to about 55% vol. for the Blanco); use of traditional stills (copper stills are cited for some expressions) and triple distillation for the Ollitas brand.
Ageing
