Pairing Red meats, game, aged cheeses
The Villero Barolo DOCG 2021 by Giacomo Fenocchio expresses the classic character of Nebbiolo with elegance: on the nose it opens with ripe red fruits, rose petals and earthy suggestions, followed by subtle spicy notes that do not overpower the varietal base. On the palate it is compact and well-defined, with firm tannins smoothed by freshness, a vibrant acidic thread and a sense of cleanliness that keeps the sip lifted. The structure is solid without weighing it down; the progression invites attentive tasting and suggests potential for evolution in bottle.

The sip leaves a persistent trail, where returns of fruit, light balsamic notes and a herbaceous hint intertwine with a pleasant sapidity that gives drive to the finish. It pairs confidently with red meats, braises and stewed mushrooms, but also stands up to aged cheeses and umami-rich preparations. It is recommended to open the bottle in advance and serve in large glasses at a not-too-high temperature to capture nuances and aromatic progression.
