The aging takes place in oak barrels that previously held bourbon and sherry, helping to balance the peatiness with sweet notes of vanilla, dried fruit, and warm spices. On the nose, it opens with scents of wood smoke, aromatic herbs, and touches of honey, while on the palate it reveals itself as soft and persistent, with a pleasant oily sensation and a enveloping finish that recalls peat and some balsamic notes.

Distillation
For whiskies and gin Amrut predominantly uses copper pot stills and traditional washbacks; for some rums distillation is performed in iron stills from jaggery, followed by blending with aged foreign rums.
Ageing
Maturation in the Indian tropical climate with strong cask/spirit interaction; frequent use of finishing phases in different cask types to create expressions such as Portonova (finishing in port pipes) or preparations with sherry/intermediate sherry.
