The artisanal production respects the Scottish tradition, enhancing the variety (malted barley) and the unique terroir of Islay, among waves, peat bogs, and salty wind that influence the aroma and final taste. The aging in sherry cask provides a balance between the sharp peat and fruity sweetness, creating a complex bouquet with nuances of raisins, ripe cherry, and vanilla touches.
On the palate, the whisky is enveloping and full-bodied, with an elegant persistence that leaves the memory of spicy and slightly woody notes. Perfect to enjoy neat or with a splash of water, it pairs splendidly with robust dishes such as smoked meats, aged cheeses, or dark chocolate-based desserts.
