Production method

The distillery uses Hobbister Moor heather peat to smoke the malted barley, favouring an aromatic, subtle smoke. Operations include on-site production and maturation; the company has also invested in modernisations (e.g. heat recovery systems) and plans for responsible peat and land management.

Founded as a local enterprise by Magnus “Mansie” Eunson in 1798, Highland Park has operated in Kirkwall (Orkney Islands) for over two centuries. Over its history the distillery has passed through various ownerships and is today part of the Edrington group. The brand's reputation was built on the distinctive character derived from the use of Orkney heather peat and maturation in sherry-seasoned oak casks.
