Distillation and production

Production method

Production based on distillation of wine-derived alcohol and on infusions of local botanicals; some products are made by infusing pomace (Sangiovese pomace) or by infusing wine in alcohol. Small-batch artisanal processes are used at the Gaiole in Chianti facility.

Distillation of wine-based alcohol and subsequent processing through botanical infusions; for some references the use of pomace infusion is applied instead of the classic maceration in neutral alcohol.
