Pairing Seafood, aperitifs, light dishes
Elegant and taut, this Blanc de Blancs Premier Cru Champagne by Benard Pitois expresses a refined, linear profile. Fine bubbles support a bouquet that recalls fresh citrus, green apple and white flowers, shaded by a subtle note of toasted bread that makes the nose more tactile without weighing it down. The acidity is lively but well integrated, giving drive and clarity to the sip, while the salinity balances the fruit and lengthens the finish. It reveals a restrained but precise personality, suited to those who seek elegance rather than opulence.

On the palate it shows a pleasant balance between nerve and softness: a fresh entry, a slender body and a dry finish with citrus echoes and a light minerality. It’s a versatile Champagne, perfect as an aperitif but also able to accompany raw seafood, shellfish and fresh cheeses; it also stands up well to light Asian dishes or seafood risottos. Serve chilled, around 8–10 °C, in not-too-large glasses to appreciate the finesse of the bubbles and its aromatic cleanliness.
