Champagne Premier Cru Nature by Benard Pitois shows a dry, linear character, where the removal of sugar highlights the raw material. In the glass the perlage is very fine, the aromatic profile moves between citrus zest, green apple and light notes of bread crust, supported by a subtle floral and mineral vein; the palate is taut, played on lively acidity and salinity that lengthen the drinking without weighing it down. The sensation is one of precision and cleanliness, with a pleasant energy that invites the next sip.

It works well both as an aperitif and paired with seafood, oysters and light dishes; it also holds up to raw fish preparations thanks to the clarity of the finish. Serve chilled but not icy, in a flute or tulip glass to appreciate the aromas; it’s a bottle to bring to the table when you’re looking for a dry, characterful and gastronomically versatile champagne.
