Al naso, L’Ouverture Extra Brut si presenta con un bouquet complesso e floreale, dove spiccano note di mela verde, agrumi freschi, e leggere sfumature di fiori bianchi. C’è una piacevole sensazione di crosta di pane e lieviti, tipica dei migliori champagne, che deriva dalla sua lunga maturazione sui lieviti.

Small-scale estate with a strong sense of place. Vineyards predominantly planted with Pinot Noir, with a smaller proportion of Chardonnay. Vineyard practices aimed at respecting the natural balance Parcel-by-parcel winemaking, use of barrels, and spontaneous fermentations reported by some sources. Cuvée noted for low dosage and a mineral character.
Winery history
The estate developed from a small family holding: documents and the producer’s profiles indicate that grandfather René began the business after World War II; his father Daniel continued its management, and Frédéric gradually joined the company in the 1990s, leaving the cooperative to establish his own winery and ultimately assuming full leadership.
Production philosophy
The approach favors soil-respecting viticulture, manual work and parcel-by-parcel winemaking with minimal cellar intervention. The stated objective is to let the terroir express itself: minimal additions, fermentations in wood and stainless steel depending on the parcels, and careful winemaking to preserve tension and minerality.
Terroir and vineyards
Vines located in the Montagne de Reims, chiefly in the commune of Écueil, with additional parcels in Villers-aux-Noeuds. The soils are typically calcareous with clayey and sandy components that influence the wines' structure.
