On the palate it shows body and structure, a roundness that does not sacrifice freshness nor salinity: the alcoholic warmth is firm but never harsh, and the persistence leaves bitter and citrus traces that lengthen the finish. It is very well suited to structured cocktails — a bold Gin&Tonic, a Martini that asks for character, or contemporary twists — but also stands up to neat tasting over ice; I recommend serving it slightly chilled with a large ice cube. To accompany it, flavorful charcuterie boards, smoked fish or aged cheeses are fitting pairings.
