It is best enjoyed chilled or on the rocks as a digestif, but it also finds a natural place in rum-based cocktails and tiki drinks where coconut should remain the star; it pairs well with dark chocolate desserts or with coconut ice creams and cakes, and can be used sparingly to glaze grilled fruit. Serve at around 8–12 °C in a tulip or old fashioned glass to appreciate its aroma and roundness.

Distillation
Column distillation (double-effect columns); distillation of the vesou for rhum agricole, produced at about 80–89° before dilution.
Ageing
Finishing in oak foudres for bonifiés (white rhums) and ageing in oak barrels/casks (including ex-bourbon barrels) for rhum vieux; some vintages are finished in casks for multiple years.
