On the palate it reveals restrained warmth and depth, smooth and free of harshness: the structure is soft but well-defined, ideal both for tasting from a small chilled glass and as an ingredient in mixing; it lends itself to classic cocktails or contemporary reinterpretations. It is best enjoyed served cool but not excessively cold, to let the finer aromas emerge. As a pairing it gracefully accompanies dark chocolate, dry pastries and red-fruit desserts, or it can add character to pastry preparations, ice creams and delicate sauces.
