Novebolle Spumante Brut DOC presents a clean, versatile profile: fine, continuous perlage supports a dry, lively sip, characterized by a fresh acidity that gives it lift. On the nose there are hints of green apple, pear and citrus zest together with light floral notes; on the palate it is lean, with a balance between salinity and tension that makes it agile and pleasant, without harsh edges. The persistence is moderate, the finish clean and inviting—ideal for those seeking an easy-drinking yet well-constructed sparkling wine.

Serve chilled, in a flute or tulip glass, to highlight the effervescence and freshness. Excellent as an aperitif, it pairs well with seafood starters, light fried dishes, sushi or vegetable-based courses; it also works with fresh cheeses and desserts that aren’t too sweet. It’s a wine to drink young to enjoy its vivacity, perfect for informal gatherings and moments when you want an unpretentious but carefully made bubbly.
