The El Dorado 5Y Demerara Rum is an authentic expression of the rum-making art from Guyana, where it is produced following ancient traditions. Distillation
Blend of distillates from Coffey column(s) (including a wooden Coffey) and historic pot/wooden stills (Port Mourant, Enmore, Versailles and other stills preserved at Diamond), combining column and pot still techniques.
Ageing
Aging in wooden casks (extended maturation in the Demerara climate), followed by blending (assembly) of the aged distillates; some expressions specify the minimum age of the blend (e.g. 3–25 years).
