Sangiovese Superiore - Santa Reparata derives from organic farming, with a production amounting to 7,000 bottles.
The grape harvest takes place by hand, and begins in the second decade of September. Regarding the vinification, the Sangiovese grapes of the different clones are harvested together and fermented in blends. Fermentation and subsequent maceration on the skins take place in steel vats at a controlled temperature. The contact of the wine with the skins lasts on average 24 days; malolactic fermentation follows Aging is 9 months in steel and at least 3 months in the bottle.
The nose stands out for its fruity notes with a prevalence of red and black berried fruits. In the mouth it enters soft and elegant with an excellent balance of the acid base, followed by a soft and delicate tannins. The long and persistent finish is characterized by a notable sapidity. A wine with character that will never disappoint expectations and which, combined with meat and cheese dishes, will spread all its complexity and uniqueness.
