On the palate it confirms the freshness: lively entry, balanced savoriness and a softness that keeps the sip easy-drinking; the body remains slim but present, with a persistent, clean finish that releases citrus echoes and a slight spicy warmth. It lends itself well to mixing — a successful margarita starts from such a clean base — but it also stands up to neat drinking, slightly chilled in a small glass. Ideal pairings: seafood dishes, ceviche and light Mexican cuisine.

Distillation
Double distillation; predominantly produced using pot-still style stills. For some ancestral expressions they employ a setup with an earth oven and a copper still heated with wood.
Ageing
Aging in American oak barrels; Reposado: about 6–8 months in American oak (used barrels >20 years), Añejo: 14–16 months, Extra Añejo: 48 months of maturation followed by stabilization in the distillery's pipones.
