Méthode de production

Signatory ne se concentre pas sur la distillation mais sur l'achat, la sélection et l'embouteillage de fûts provenant de différentes distilleries ; il embouteille souvent des fûts uniques (single cask) et propose des sorties en cask strength et non chill-filtered.

Vieillissement

Les bouteilles Signatory proviennent de whiskys vieillis en fûts dans les distilleries ; Signatory est réputé pour la sélection et l'embouteillage des fûts et dispose également d'entrepôts pour le stockage et la gestion des casks.

Histoire du producteur Signatory

Fondée en 1988 par Andrew Symington et son frère, Signatory Vintage a rapidement grandi grâce aux embouteillages single cask et aux sélections soignées. En 2002 Andrew Symington a acquis la distillerie Edradour et y a transféré de nombreuses opérations, développant par la suite des capacités d'entreposage et de production liées au site de Pitlochry.

Philosophie de production

La philosophie de l'entreprise privilégie la transparence et l'individualité du cask : chaque fût est évalué et embouteillé pour valoriser son profil unique, avec une attention particulière aux expressions single malt, souvent non chill-filtered et en cask strength lorsque cela est approprié.

Territoire

Pitlochry (Edradour), Écosse. Opère à l'international en tant qu'embouteilleur indépendant spécialisé dans le Scotch whisky.
