Distillation and production

Production method

The grappas listed in the company catalogue are distilled in small-capacity pot stills (about 200 L) with water-bath heating, using a double distillation that separates the fractions. After a resting phase in stainless steel the distillate is cooled and filtered before bottling; the alcohol is then reduced to the desired strength with microbiologically controlled spring water.

Producer history Jermann

The Jermann family has been active in Friuli Venezia Giulia since 1881, when Anton Jermann settled in the wine-growing area. The company became internationally known especially from the 1970s onwards thanks to Silvio Jermann's work and the launch of the famous Vintage Tunina blend in 1975. In 2021 the Antinori family entered the ownership with an agreement for the majority stake, while production continuity and ties to the territory were maintained.

Production philosophy

An approach focused on the quality of raw materials from its own vineyards and on supply-chain control: grappas are produced from selected cellar pomace, enhancing local grapes and the estate's varieties. Official communications emphasize respect for the terroir and attention to traditional production practices adapted with technical rigor.
