Production method

Elaboration according to the traditional methods of Jerez: white winemaking, fortification where applicable and ageing through the criaderas and solera system. For Fino/Manzanilla biological ageing under a layer of flor is used; Amontillado/Oloroso follow mainly oxidative ageing. Sweet reserves (Pedro Ximénez, Moscatel) and brandies are finished in American oak casks previously seasoned with sherry.

For the brandy: production of holandas by traditional copper pot-still distillation and subsequent ageing according to the solera system; the typical method of Brandy de Jerez.

Ageing

Criaderas and solera system; finishing in American oak casks; biological ageing under a layer of flor for Fino/Manzanilla and oxidative ageing for Oloroso/Amontillado; some sweet reserves and brandies finished in casks previously seasoned with Oloroso or Pedro Ximénez.

Founded in 1781 by Juan Sánchez de la Torre in alliance with the Romate family, Sánchez Romate is one of the few Jerez companies still in the hands of the same family after more than two centuries. Over its history the house has developed a range of Jerez wines (Fino, Amontillado, Oloroso, Pedro Ximénez, Moscatel) and brandies; the Cardenal Mendoza brandy, created at the end of the 19th century, is one of its best-known products. The bodega has also received historical recognition as an official supplier to institutions (historical mentions of supplies to foreign entities at the beginning of the 20th century) and preserves traditional soleras for its reserves.

Preservation of the traditional practices of the Marco de Jerez, focus on family continuity and slow maturation through the criaderas–solera system. Valuing the territory (albariza soils) and the typical local varieties to express the specificity of the different styles of sherry and brandy.
