This Champagne is produced in limited quantities, reflecting particular attention in the selection of grapes, all sourced from the finest plots of the estate.

This Cuvée is primarily composed of Pinot Noir, which provides body and structure, with a small percentage of Chardonnay to add elegance and freshness. The vinification involves traditional fermentation in oak barrels, followed by a long period of maturation on the lees, contributing to an extraordinary aromatic complexity.

On the nose, the Cuvée Essence opens with intense notes of white pulp fruits, honey, and toasting, enriched by subtle hints of hazelnut and brioche. Winery history
The Pillot family has been established in the Côte Chalonnaise for several generations: the company's website records six generations of winegrowers and viticultural activity on these hills for around 150 years. Bottles have been marketed since the 1960s, and the winery, with parts dating to the 18th century, was renovated in the 1990s. Romain and Simon are listed as the current managers, who officially took the reins of the estate in 2024.
Production philosophy
The estate highlights the passing down of family knowledge, a traditional winemaking approach, and meticulous vineyard care to express the character of Mercurey's terroirs. Traditional practices are combined with modern equipment and careful attention to the quality of the vineyard parcels.
