Earth & Sky from Thymiopoulos Vineyards is a unique wine originating from the mountainous region of Greek Macedonia, where altitude and mineral-rich terroir give the product an unmistakable personality. This white wine is made from Assyrtiko grapes cultivated using biodynamic methods, an authentic expression of the territory and local winemaking tradition.



Characterized by vibrant freshness and deep minerality, Earth & Sky releases aromas of citrus, white flowers, and saline notes that recall the proximity to the sea and limestone soils. The aging takes place in stainless steel to preserve its integrity and aromatic purity, enhancing the clean and complex character of the variety. Winery history
The Thymiopoulos family has been involved in farming and viticulture for generations in the Trilofos area. Apostolos Thymiopoulos, trained in oenology, began bottling the wines of his project with his first release, "Earth and Sky"; since then he has developed a range focused on different expressions of xinomavro, aiming to convey the specificity of each cru.
Production philosophy
The estate adopts sustainability-focused agricultural practices and minimal intervention in the winery: organic farming, selective use of biodynamic practices, and low-intervention vinification to bring out the character of each vineyard and of Xinomavro.
Terroir and vineyards
Vineyards located in Trilofos and Fytia on the slopes of Mount Vermio, in the Naoussa area. The vineyards occupy hilly sites with variable soils and mountain microclimates that influence the freshness and structure of the wines.
