This Nerello Mascalese Bianco IGT from Agricola Ayunta presents a delicate, well-defined aromatic profile: white flowers, citrus peel and a fresh mineral note that mark its character. The bouquet is clean without excess, giving way to an immediate, lively entry on the palate, where freshness combines with measured sapidity and a lean structure that supports the sip without weighing it down. Its elegance lies in restraint: it doesn’t seek showy effects but focuses on purity and overall balance.

On the palate it is smooth and dry, with citrus echoes and light herbal hints that prolong the drinking; the persistence is pleasant, not aiming for extreme complexity but offering a pleasingly clean finish. It pairs very well with light dishes — raw seafood, grilled fish, savory salads or fresh cheeses — and works excellently as an aperitif wine. Also perfect with shellfish recipes and flavorful vegetarian dishes; open the bottle shortly before serving to preserve its aromas.
