In cocktails it finds its ideal setting: it stands up well to sweet and citrus ingredients, making it suitable for classic cocktails or tropical interpretations, but it also works equally well served neat or with a single ice cube to appreciate its freshness and the clean quality of the sip. Best served slightly chilled to maintain clarity and vivacity; an excellent companion to crustacean dishes or lightly spiced flavors, where its aromatic energy can make the difference.

Column distillation (double-effect columns); distillation of the vesou for rhum agricole, produced at about 80–89° before dilution.
Ageing
Finishing in oak foudres for bonifiés (white rhums) and ageing in oak barrels/casks (including ex-bourbon barrels) for rhum vieux; some vintages are finished in casks for multiple years.
