The Vieux 12 Years expression from Damoiseau presents a calm yet decisive profile: long aging gives it a deep amber hue and aromas reminiscent of caramel, vanilla and a subtle note of dried fruit. On the nose the picture is linear and well-defined, with a delicate wood toast that tempers the sweetness and adds finesse, never weighing down the aromatic ensemble.

On the palate it shows roundness and balanced warmth, a medium-full body and a velvety tannic texture that supports the sip; toasted honey, a hint of bitter cocoa and a slightly spicy, persistent finish emerge. Perfect to enjoy neat or with a small ice cube, it pairs naturally with dark chocolate, aged cheeses or as the star in cocktails that call for a mature rum. Distillation

Column distillation (double-effect columns); distillation of the vesou for rhum agricole, produced at about 80–89° before dilution.

Ageing

Finishing in oak foudres for bonifiés (white rhums) and ageing in oak barrels/casks (including ex-bourbon barrels) for rhum vieux; some vintages are finished in casks for multiple years.
