Distillation and production

Production method

The grappas are made from fresh pomace from the estate's vineyards; fermentation and subsequent distillation follow traditional methods (discontinuous method) and aging takes place in small wooden casks.

Distillation

Discontinuous method, water-bath (bain-marie) in small copper stills/apparatus (traditional distillation from fresh pomace).

Ageing

Aging in small wooden casks; timing varies by label (about 10 months for the Moscato Moncucco grappa, over a year for the Barolo Riserva/Vigna La Rosa grappas).

Producer history Fontanafredda

Fontanafredda was established in the second half of the 19th century and is closely linked to the history of Barolo; the official company history records the estate's founding in 1858 and describes continuous development up to contemporary activities that include production of pomace-based specialties and the Villaggio Narrante project.

Production philosophy

Enhancing the territory and its grapes/pomace: the grappas are produced from the pomace of the estate's crus, following historical recipes and an approach that combines tradition with attention to sustainability and resource recovery.

Territory

Langhe (Piedmont), with pomace sourced from estate crus in areas such as Serralunga d'Alba (for Barolo grappas) and S. Stefano Belbo (for the Moscato Moncucco grappa).
