Distillation and production

Production method

Spontaneous fermentation of musts/fruit purees or of pomace, followed by artisanal double distillation in copper stills heated in a water bath. The stills were designed by Capovilla and built by a German craftsman. White distillates are rested/matured in stainless steel vats; some products are further aged in barrique.

Producer history Capovilla Distillati

The Capovilla story began with the passion of Vittorio (Gianni) Capovilla who, after contacts with Central European distillation in the 1970s, conducted private experiments for more than a decade and opened the distillery in 1986. Over time the company has remained family-run and has gained international recognition for its artisanal productions and for research on fruit distillates, pomace spirits and unconventional categories such as Bierbrand.

Production philosophy

The production philosophy prioritizes the quality of raw materials and minimal manipulation: selected fruit (including wild varieties), pomace with low SO2 content, spontaneous fermentation without additions, and slow processing to preserve natural aromas. The approach is focused on faithfully extracting the organoleptic identity of the raw materials.

Territory

Headquartered in Rosà (province of Vicenza), at the foot of the Venetian Prealps; the area refers to the Veneto territory and uses water from Monte Grappa springs for production.
